  1. Preheat oven to 350 degrees Fahrenheit and prepare vegetables.
  2. Add diced chicken breast to your Dutch Oven.
  3. Put in blender – coconut milk, chicken broth, garlic clove, cashews, onion powder, basil, garlic powder. Blend until smooth and completely mixed together.
  4. Pour 1/2 of the sauce from your blender evenly over the chicken breast in the dutch oven and mix.
  5. Add the onion, mushrooms and broccoli on top of the chicken.
  6. Pour the remaining 1/2 of your sauce from the blender evenly over the vegetables.
  7. Cook at 350 degrees Fahrenheit for 1.5 hrs.
  8. Remove from the oven, mix together and let cool to allow the sauce to thicken a little more.
  9. Side options: Mixed greens salad, spaghetti squash, zucchini noodles or white rice (if able to tolerate it).
